Brilliantly green, crisp, and with a bright acidity Granny Smith apples are a classic cooking apple but also are amazing when eaten out of hand. The Granny Smith's bright acidity makes it the perfect counterpoint to rich high-fat cheeses like brie and will liven up any holiday cheese plate.



EASY, ORGANIC APPLESAUCE WITH AN INSTANT POT VERSION

INGREDIENTS
  • ¼ teaspoon Organic Ceylon Cinnamon
  • 3 pounds of Organic Granny Smith Apples chopped (I usually buy in a three pound bag to save money per pound.)
INSTRUCTIONS
  1. For Instant Pot:
  2. Wash and peel apples.
  3. Chop each apple into four or five pieces.
  4. Place chopped apples in Instant Pot.
  5. Sprinkle cinnamon on top.
  6. Place lid on top, close, and secure.
  7. Press Manual high pressure
  8. Make sure the vent is closed on top.
  9. Adjust the time to 20 minutes.
  10. When done, open the vent and allow the steam to come out completely. Do not place your face over the vent. Once the steam has dissipated completely, remove the lid and enjoy.
  11. For oven:
  12. Preheat oven to 375 degrees bake.
  13. Wash and peel apples.
  14. Cut each apple into four to five pieces.
  15. Place apples in a large oval or rectangular glass or ceramic baking dish with a glass lid.
  16. Sprinkle with cinnamon.
  17. If you don't have a glass lid, I do not recommend using aluminum foil. It can leach into foods.
  18. This recipe won't work without having a covered dish because the apples steam.
  19. Place baking dish on a large cookie sheet or baking tray covered with unbleached parchment paper, just in case any bubbles over from the baking dish while cooking. It will make a mess in your oven if it leaks.
  20. Check the apples after forty (40) minutes and stir.
  21. Place lid back on apples and bake for another fifteen (15) minutes or until soft and tender.
  22. Remove from oven. Serve immediately or allow to cool. If you leave the lid on and allow to cool outside of the oven, the apples will caramelize slightly.
  23. Optional: Add a dollop of organic coconut oil and top with sprouted or roasted pecans. Applesauce also freezes very well in glass Tupperware to pull out for an anytime treat, breakfast or snack.
